Blue Cheese Mousse

Ingredients

  • 6 oz of blue cheese crumbles 
  • 4 oz of cream cheese 
  • 1/3 cup of heavy cream 
  • Pinch of salt   

Procedure 

  1. Puree blue cheese crumbles and cream cheese Until smooth.
  2. Beat heavy cream in a glass or metal bowl until soft peaks form. Lift your beater or whisk straight up: the whipped cream will form soft mounds rather than a sharp peak.  
  3. Fold whipped cream into the blue cheese mixture. 
  4. Transfer into a piping bag. 
  5. Spread over a crostini and pair with Heath Sparkling Euphoria
